Mediterranean Sea Bass
Ingredients
1 cut red onion
Salt
Thyme and parsley while, handful roughly chopped parsley
Drizzle olive oil
4 slices lemon, rest cut into halves or wedges to serve
2 sea bass
1 bell pepper finely sliced
Half a beetroot - peeled with vegetable peeler
Description
This one will save any dinner party - it doesn't need much prep but it looks oh so well, all there is to do is to cut the veggies and bake the fish. And yet it is a very healthy and tasty dinner that can be enjoyed with a simple salad.

This one will save any dinner party - it doesn't need much prep but it looks oh so well, all there is to do is to cut the veggies and bake the fish. And yet it is a very healthy and tasty dinner that can be enjoyed with a simple salad.
Ingredients
1 cut red onion
Salt
Thyme and parsley while, handful roughly chopped parsley
Drizzle olive oil
4 slices lemon, rest cut into halves or wedges to serve
2 sea bass
1 bell pepper finely sliced
Half a beetroot - peeled with vegetable peeler
Method
1 step
Heat oven to 200C/180C fan. Toss the peppers, beets and onions with salt and olive oil. Spread on a baking tray together with lemon halves cut side down.

Score the sea bass on its sides (3 scores is enough), brush fish with oil, season, put lemons and herbs inside and roast for 20-25 mins - the flesh should feel firm to the touch and should be flaky and white.
3 step
Take out of the oven and leave to rest for 5 minutes. Squeeze over some lemon juice and scatter with parsley to serve.
