Gazpacho Soup

Ingredients

6-7 medium tomatoes

1⁄2 small red onion

3 Tbsp olive oil

1 garlic clove

2 Tbsp of sherry vinegar

Salt and pepper

1 slice of white bread soaked in water, crust removed

Water (optional and if needed)

1 sweet pepper

1 small cucumber

Method

The weather in Ireland is fab-fab-fab. It feels like Spain and that means cold summer soups season in on!

Place all the ingredients in a blender, and blend until smooth.

2 step

Chill before serving.

3 step

Drizzle over olive oil and serve.
